Give the drive a name, choose an encrypted option under Format (the options are explained here) and choose GUID Partition Map under Scheme. This open-source encryption software is one of the most popular, albeit not the prettiest, encryption tools out there. You can also turn FileVault on (or off) whenever you like by opening the Apple menu and choosing System Settings then Privacy & Security. If you’re looking for a free enterprise-grade encryption program, VeraCrypt should be at the top of your list. You'll be asked to enable FileVault when you first set up macOS on a new machine, and it's something we'd recommend.
